I've been using coconut oil for a while now. I use it when I saute zucchini, with a bit of butter.
I recently tried it in cake instead of the usual vegetable oil. We'll see what happens. Surprise, surprise, my tummy had less trouble than when I used corn oil.
I've also recently added coconut milk. It was on sale and cost less than my lactose-free milk. So far, I've been using it to mix half and half with my milk when I make Carnation Instant Breakfast for lunch. It's incredibly filling. I really like it. This is fun.
